From Vicki’s kitchen:
VFC secret recipe
It's as close as you can get without pressure
cooking your chicken as they do at KFC so it's
a lot healthier......
2 cups flour
1/2 tsp salt
1/2 tsp dried thyme
1/2 tsp dried basil
1/2 tsp dried oregano
1 tbsp celery salt
1 tbsp black pepper
1 tbsp dry mustard
4 tbsp paprika
2 tsp garlic salt
1 tsp ground ginger
1 tsp ground mace
Mix all ingredients well in a large bowl.
Dip chicken pieces in some plain flour then
beaten eggs.
Dip them in breadcrumbs (bought ready-made
from the shop are fine)
Finally plunge them in the flour-spices mixture
(above).
Place chicken in a tray and cover with foil
Cook 40 minutes.
Remove the foil, turn chicken then cook for
another 40 minutes
Baste lightly with oil 5 minutes before the end
(spray cooking oil is good)
Let stand 5 minutes and serve.
Cooking times will obviously depend on
whether you're cooking in on a range or in an
oven, if you know how long chicken pieces take
in your cooker, you're in!
